Cake without flour

You really don't need to use wheat flour to make a cake. I am a big fan of almond meal/flour; it brings a lot of density to a cake, and because of the natural fat it contains, a smaller slice satisfies better. This healthier fat, together with the protein and fibre offered in almonds will help to prevent the blood sugar spikes so often associated with flour based cakes. The recipe below is a fantastic one - olive oil and almonds together, with three eggs too - it can almost be described as nutritious except for the sugar (sugar can be reduced in any recipe and often leaves the cake still sweet enough; especially for people who don't have too much else that is sweet in their diet!).
